122 mm: Medium derp, higher alpha than it's US/German counterpart. Always deal some damage but is never the optimal choise.
85 mm: Workhorse, high alpha but somewhat lacking in pen and accuracy. Oneshots tier 3 and kill tier 4 in 2-3 hits. The alpha advantage is not that impressive when facing tier 6 and up.
There is no "best" gun for the KV-1 but one of them fit your playstyle more than the other ones. Try them all and decide which one you prefer.

U-11 is unreliable.
57mm... sounds nice, but I already have a Churchill. Heavy tier 5 that goes pew-pew with low damage and high RoF. You can try that on a T-34 and see if you like it.
Stock gun is never any good. By default.

I've had games with 30+ hits with the 57mm and against either side armour, or lower tiers, the majority WILL damage.

122 mm U-11 > 85 mm F-30 > 57 mm 413 >> 76 mm ZiS-5
The last one I didn't even try but it clearly sucks.
I say that 122mm is the best because it has decent RoF with rammer; if you are top tier, you oneshot almost everything, whereas if you are bottom you will do some damages anyway because of HE shells.
85mm is decent but 120mm pen is too low when you face tier 7-8s.

I play casually KV-1 (just training the crew and I intend to sell it later), but last week I got Ace tanker, master gunner, sharpshooter, steel wall, sniper using the miniderp ...

Due to long reload time, this gun won't give you alot of kills against high-tier tanks (xept against tanks with allready damaged ammo racks when shooting their viewports), so like its been said, stick to the support role and do moderate-high damage to everything.
Staying with the team is an advice worh listening to, as scouts might use your long reload and poor overall traverse to circle you.
Peek-a-BOOM is a useful tactic. And if you can get behind the enmy and hit weakspots like turret viewports, turret ring, or similar places with poor armor, you can be a real headache to everyone who doesn't take you seriously.
