My choice would definitely be Pz.Kpfw. 38 (t) - simple and reliable, while boasting great mobility. Not to mention it is so small and cute.

Mine would have to be divided between 2. Early war it would be the Panzer III, as it was the most versatile and capable tank of  it's time, because although the T34 was a more capable vehicle, it lacked the 5 man crew and radio of the Panzer III, which I think was a more crucial development than the sloped armour the T34 brought to the table. Late war I'd have to go for the T44, as it was probably the first true MBT, armed with the gun from an equivalent era heavy tank (First the 85 D-5T then later the 100mm D-10T which were also seen on the IS series tanks), with armour to match a heavy tank also, but the mobility and speed of a medium tank (Thanks to the transverse mounting of its engine), it was a highly capable tank. It was also the first tank in the Soviet Union to get a 2 plane gun stabilisation system (the Cyclone system).

Mostly though I just think they look damned cool!
