I gotta go with poached, those rubber cup things are a lifesaver

My favourite egg with soldiers. But I'm far too lazy and incompetent for that. So I fry eggs. I have them with runny yolks and scrape them across toast with a knife. Don't eat the white so Samson gets them.

Scrambled are great too as I'll eat all the egg then. Have to be a little sloppy though. Dry scrambled eggs are just wrong.

Poached and broke over a hot jacket potato with a bit cheese sprinkled over  :)

I prefer my eggs processed into blinis or syrniki.

Have those with some sour cream and preiselbeerenkompott.

Yup like them in an omelette as well,

melt some butter n a pan,

very lightly fry some spring onions, mushrooms and tomato, just enough to soften them slightly,

pour over a couple of beaten eggs,

when the the eggs almost cooked but still runny add grated cheese and fold the omelette in half onto a plate,

put in micro for about 25 seconds just to finish cooking the egg and to melt the cheese.

serve with hot fresh garden peas with a big dollop of butter melting over them :).

Hard boiled, chopped up, mixed with Bovril and served in a sandwich made with crusty white bread spread thickly with butter.

I don't eat pork. 

 

But I prefer to eat eggs with just toast.

I love a good cup of coffee but a fry-up just tastes wrong unless it's served with mugs of tea.

Boiled eggs can be eaten whole as is, can be regrigerated for later, can be sliced on top of a bread, can be placed as a side for salads or any food basically. Just versatile. That's what I like about them. I never really liked scrambled or fried eggs, the texture is just, I don't know... Off for me.

Scrambled with some cut sausages, some cheese and bacon on the side.

With Smoked Salmon of course !

 

Ingredients

  • 30 g butter , plus a little extra for spreading
  • 6 large free-range eggs
  • 2 slices sourdough or crusty white bread , griddled or toasted
  • sea salt
  • freshly ground black pepper
  • 4 slices smoked salmon , from sustainable sources, ask your fishmonger
  • 1 lemon , quartered
  •  

Method

  1. Melt the butter in a small saucepan over a moderate heat until it’s foaming. Whisk the eggs in a bowl and add to the saucepan. Stir the eggs continuously with something flexible like a spatula to get right into the corners, and cook until little pieces of cooked egg are surrounded by soft, smooth and still quite runny egg. The egg will continue to cook even when the heat is turned off, so undercook them slightly and leave them in the pan while you butter your toast. Season the eggs to taste and pour over the toast. Drape the salmon over the eggs and serve it with the lemon wedges. Add plenty of black pepper and serve immediately.
