Like it says in the title, 7 shots fired, all APCR (i.e. no HE, so it's not splash), and 8 hits, so does this indicate that one of my shots bounced off the intended target and hit another tank (which it also didn't penetrate?) ...I've not noticed this in my battle results before, so it got me wondering how the game has counted this.

iirc yes. Not something I notice often myself. But we had the same question a few weeks ago with a replay. He got a kill with a shot that did hit a different enemy tank first. And it counted one extra hit vs fired.

If you fired at closely grouped enemies you may have got two dings?

Or were they all spread out

No penetrations so no pass through shots? edit: 4 penetrations, I wonder if they can go straight through a thin skin like a skorpion turret and hit another tank, can't see why not

20mm armour should barely hold up a 180mm ap shot

Yes, it's entirely possible.

In the past, I have shot against a platoon of Thuds. The shell ricochet off the turret of the platoon leader and struck the thinner turret side of his ally, going through it.

Same as shot traps making rounds "riding" into the thin hull actually happen as well (Defender, 50TP proto).

Because game "destroys" a shell after it penetrates.
