Your highest tier tank played is a tier VIII. How are you to know the attributes of the tier X mediums?
Also in end game content there is a huge difference between what is good and works solo in random pub matches, what is good and works in platoons, and lastly and wholly differently what is best for team play in clan wars.
If you look at the forum and search for the 2020 one versus one contest, you will see that in those tier IX matches the overall champion played the M46 Patton.
If prior to the contest you had asked the forum "I do not care about the line, even if it is the Japanese line, but what t10 medium is good?" and put in IX and not X very few players would have said the M46 Patton but there it is round after round of victories in a one on one contest.
Your question is too widely drawn and the only sensible answer to it is most of them with a few exceptions.

ok let me rephrase,
if you want to grind a medium tank, what would that tank be?
That depends on your playstyle and abilities (neither of which you have yet - and that's not an insult, that's normal, you need a few thousand battles to get a grip on different types of tanks and really learn to spot your own mistakes - some never do - and improve on them).
So 430U is the easiest to do something in. TVP (and to a lesser extent Progetto 65) provide you with a guaranteed burst damage, even if you end up overexposed. Leo I is great a second line support. STB-1 is great a closer aggressive hull down support, Patton is a good all-rounder, 140 is a DPM machine, etc...
In all, most lines are good. The Russian 140 medium line, the German Leo line, and Italian lines are all relatively fun to play throughout the tiers.
I would at this point avoid BatChat (out of meta), Centurion (doesn't have anything that others cannot do better) and the rear turret Russian medium. Others not mentioned are just meh.

The UDES 15/16 is a very good tank. You could say it's even better than the 430U or the Patton.
Good alpha, good DPM and a decent gun. Hull down, it's a very effective tank. Maybe its HEAT penetration isn't that good (310mm) but not a big deal.
The best medium at tier 10 is a heavy, arty, wheelie or anything else for that matter.
To quote a very wise person I remember reading this on the forum a while ago
"Medium tier 8's have no place fighting tier 10's in fact medium tier 10's have no place fighting tier 10's either"
The issue lies with the fact these are highly difficult tanks to play at higher tiers as anew guy I made that mistake, it took me 3 years to get my 1st tier 10 it was a medium STB-1 before the buff and basically it was almost useless at tier 10 you have something like 150mm of armor approx. in most meds and heavies/TDs have close to 300mm I stopped playing for a year after that pile of garbage broke my tank heart. never felt so ripped off in my 40 year gamming career/hobby.
However these days grinding isn't as much of a chore as previously.
Personally if I was you I would look at heavies or assaults' TD's you will have a much easier time mediums are just that jack of all trades and master of none utterly meh at higher tiers unless you are a godlike player, plus i never liked being in the "middle" anyways,

121 or Object 140 line would be the ones I recommend for a new player wanting to try mediums
Chieftain or 277.
One that is actually classed as a medium, I'd probably say STB-1 currently now the Progetto and 430U have been toned down a little.
T-34-85M, you will win 100% of your tier X battles in it.
From my experience, Russians to Obj-140, quite a good line to play. All tanks are quite good and useful, and there is no change in gameplay as you progress, which is great.
